A delightful and moist banana bread recipe that is perfect for any occasion.

Ingredients

1-¼ Sifted all-purpose flour
¼ cup Whole wheat flour
1 cup Granulated sugar
½ teaspoon Salt
1 teaspoon Baking soda
½ teaspoon Cinnamon
teaspoon Cardamom
2 Large eggs
½ cup Avocado oil, or your favorite flavorless vegetable oil
3 VERY ripe bananas, peeled

Instructions

    1. Preheat the oven to 350 degrees.
    2. Grease a 5x9 loaf pan and line it with parchment or waxed paper.
    3. In a large bowl, sift the all-purpose flour, whole wheat flour, granulated sugar, salt, baking soda, cinnamon, and cardamom.
    4. In a blender, combine the eggs, avocado oil (or your preferred flavorless vegetable oil), and very ripe bananas. Blend until the mixture is very smooth. Alternatively, mash the bananas by hand and combine them with beaten eggs and oil.
    5. Gently fold the wet ingredients into the dry ingredients. The batter may be a little lumpy, so resist the urge to overmix.
    6. Pour the batter into the prepared loaf pan. Bake for 1 hour or until a toothpick inserted into the middle of the loaf comes out clean.
    7. Remove the banana bread from the pan and allow it to cool for at least 10 minutes before slicing.
