3 ⁄4 cup packed brown sugar
1 ⁄3 cup unsweetened applesauce
1 large egg, lightly beaten
1 teaspoon lemon extract
1 cup whole wheat flour

    1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease twelve 2 1/2-inch muffin cups.
    2. In a large bowl, mix together the mashed bananas, packed brown sugar, unsweetened applesauce, lightly beaten egg, and lemon extract. In another bowl, sift together the whole wheat flour, baking powder, salt, ground ginger, and baking soda.
    3. Add the flour mixture and quick-cooking oats to the banana mixture, gently stirring just until combined. Be careful not to overmix. Fold in the fresh blueberries. Spoon the batter evenly into the prepared muffin cups.
    4. Bake in the preheated oven until a toothpick inserted into the centers comes out clean, approximately 15 to 20 minutes. Remove the muffins from the pan, transfer to a wire rack, and allow them to cool completely.
