4 lbs bone-in beef shank
3 bay leaves
1 onion, diced
3 celery, diced
1 teaspoon italian seasoning, add more to taste
2 cups winter squash, cubed
½ cup leek, finely chopped
2 garlic cloves, minced
½ teaspoon thyme
honey, to taste
3 carrots, sliced into thin coins
celeriac, cut into thin straws (optional)
½ teaspoon sage
1 (28 ounce) can tomatoes, whole peeled
salt and pepper, to taste
1 bunch kale, chopped

Instructions

1. Begin by delicately simmering 4 pounds of bone-in beef shank and 3 bay leaves in 3 to 4 quarts of water seasoned with 1 ½ tablespoons of salt for 3 to 4 hours.
2. Ensure the bones and meat are just covered by adding water as needed. Skim off any foam that rises to the surface periodically and maintain the water level over the bones.
3. Once the meat easily falls off the bones, remove it and set aside.
4. To intensify the flavors, sauté the vegetables before incorporating them into the broth.
5. Sauté diced onions and celery with a hint of salt, pepper, and Italian seasoning, then add this aromatic mix to the broth.
6. Lightly brown cubed winter squash. Add finely chopped leeks, minced garlic, 1/2 teaspoon of thyme, and cook until softened and aromatic. Sweeten with 1/2 teaspoon of honey before adding to the broth.
7. Sauté thinly sliced carrots and optional celeriac with salt and pepper, introducing 1/2 teaspoon of sage shortly before adding these vegetables to the broth.
8. If using canned whole peeled tomatoes, break them into quarters by hand before adding them to the pot. For a touch of sweetness, add a small amount of honey if desired.
9. Let the broth simmer gently for 30 minutes.
10. Separate the meat from the bones, shred it into small pieces, then return it to the pot along with chopped kale. Simmer for an additional 10 minutes.
