Chicken and Cheese Sorullos

Delicious fried pastries filled with seasoned chicken, cream cheese, and Mexican blend cheese, wrapped in cornmeal dough.

Ingredients

2 12 cups warm water
2 cups cornmeal
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 12 pounds chicken thigh, cooked (slice into strips before cooking)
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon ground oregano
shredded Mexican blend cheese
cream cheese

Instructions

    1. Take a handful of dough and shape into a small to medium size ball. Pat the dough down into a flat ball on the work surface.
    2. Place a couple of strips of cooked chicken and a small to medium dab of cream cheese on the dough. Sprinkle with shredded Mexican blend cheese. Seal the pastry by bringing the sides up and ensuring the filling is completely covered with dough (add more dough if needed).
    3. Fill a saucepan or shallow saucepan with 3 inches of vegetable or peanut oil and heat until boiling. Fry the sorullos in batches of three to four, ensuring not to overcrowd, until the dough is crispy and golden brown. Transfer the fried sorullos to a plate lined with paper towels to drain excess grease.
    4. For a variation, you can substitute the chicken with cooked ground beef and add finely chopped bell pepper to the filling. If using beef, season with 1 teaspoon each of ground paprika and chili powder (adjust seasonings to taste).
