Instructions

For the perfect cranberry loaf
- Grate the rind from the orange, squeeze the juice into a liquid measure, and add enough water to make 3/4 cup. Set aside.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange rind. Stir in the cranberries.
- In a small bowl, whisk together the beaten egg, melted butter, and orange juice. Stir this mixture into the flour mixture just until blended.
- Spread the batter in a greased 9x5 loaf pan.
- Bake in the center of a preheated 350°F oven for 50 to 60 minutes or until a cake tester inserted in the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes, then turn it out onto a rack to cool completely.
