1 orange, for rind and juice
2 cups all-purpose flour
1 cup granulated sugar
1 12 teaspoons baking powder
12 teaspoon baking soda
12 teaspoon salt
1 cup chopped cranberries (fresh or frozen)
1 egg, beaten
14 cup butter, melted

Instructions

  • For the perfect cranberry loaf

    1. Grate the rind from the orange, squeeze the juice into a liquid measure, and add enough water to make 3/4 cup. Set aside.
    2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange rind. Stir in the cranberries.
    3. In a small bowl, whisk together the beaten egg, melted butter, and orange juice. Stir this mixture into the flour mixture just until blended.
    4. Spread the batter in a greased 9x5 loaf pan.
    5. Bake in the center of a preheated 350°F oven for 50 to 60 minutes or until a cake tester inserted in the center comes out clean.
