Classic Potato and Pea Salad with Mustard and Mint

4 | cups snow and/or sugar snap peas, cut into several pieces each |
3 | tablespoons dijon mustard |
1 | tablespoon yellow mustard seed |
2 | tablespoons malt vinegar |
2 | tablespoons pecan oil (or other nut oil) |

1⁄2 | cup chopped green onion |
Salt and pepper, to taste |
Instructions
1. | Begin by washing the small red potatoes and boiling them in salted water until they are tender. Test their doneness by poking with a slim knife. Drain and allow them to cool. Once cooled, cut the potatoes into bite-sized pieces. |

2. | Next, wash the snow and sugar snap peas. Cut them on the bias into 3 to 4 pieces per pea. |
3. | Chop the fresh mint leaves. Combine the potatoes, peas, chopped mint, and chopped green onions in a bowl. Add dijon mustard, yellow mustard seed, malt vinegar, and pecan oil. Season with salt and pepper to taste. Allow the flavors to meld by chilling the salad for about an hour before serving. Enjoy! |
