2 tablespoons olive oil
½ diced onion
1 pinch salt
¼ cup all-purpose flour
2 milk, or more to taste, divided
1 (4 ounce) package chive and onion-flavored goat cheese
½ teaspoon salt
¼ teaspoon ground black pepper

Instructions

    1. In a saucepan, heat olive oil over medium heat. Add diced onion and season with a pinch of salt. Sauté the onion until translucent, stirring occasionally, for approximately 5 minutes.
    2. Sprinkle all-purpose flour over the onion; continue to cook and stir for 1 minute.
    3. Gradually pour 1 cup of milk into the saucepan while stirring. Add the chive and onion-flavored goat cheese, stirring until melted. Gradually incorporate the remaining milk, 1/2 cup at a time, stirring constantly. Continue cooking until the sauce reaches your desired thickness, approximately 5 to 10 minutes. Season the sauce with 1/2 teaspoon of salt and ground black pepper.
