Ingredients

5 chopped broccoli florets and stalks
1 onion, chopped into 1-inch pieces
3 cloves garlic, peeled
2 tablespoons olive oil
3 cups vegetable broth
4 ounces softened cream cheese
34 teaspoon lemon pepper, or more as needed
crushed red pepper flakes to taste

Instructions

    1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
    2. In a large bowl, combine the broccoli, onion, garlic, and olive oil. Toss to coat evenly. Spread the mixture in a single layer on the prepared baking sheet.
    3. Roast the vegetables until soft, approximately 30 to 35 minutes, stirring every 10 minutes. Once done, remove from the oven. Reserve 1/4 cup of broccoli florets for garnish.
    4. In a high-powered blender or food processor, combine the remaining roasted vegetables with vegetable broth, softened cream cheese, and lemon pepper in batches. Puree the mixture until smooth.
    5. Transfer the pureed soup into a saucepan over medium-low heat and warm through for about 5 minutes. Adjust the seasoning with extra lemon pepper to suit your taste. Serve the soup in bowls, garnished with the reserved chopped broccoli and a sprinkle of crushed red pepper flakes.
