Decadent Chocolate Banana Crepes

The crepes here are made from scratch — an extra egg yolk in the milk-and-flour batter keeps them tender enough to fold without cracking. Inside: ripe banana, semisweet chocolate chips and cream cheese that melts into something between filling and sauce. Fifteen minutes of prep, fifteen of cooking, and eight servings of a dessert that looks harder than it is.

Instructions
For Crepes | |

| 1. | Heat a small skillet over medium heat. |
| 2. | In a medium bowl, use an electric mixer to blend sugar, melted butter, and vanilla extract until smooth and creamy. Add milk, egg, and egg yolk one at a time, mixing until smooth. Gradually add all-purpose flour, ensuring the batter is smooth without any lumps. |
| 3. | Lightly grease the preheated skillet. Pour 1/3 cup of batter and cook for 1 to 2 minutes on the first side. Flip and cook until golden for 30 seconds to 1 minute. Repeat with the remaining batter. |
For Filling | |
| 1. | In a medium-sized skillet over medium heat, melt butter. Add sliced bananas and cook, stirring often, until soft for 2 to 3 minutes. |
| 2. | In a microwave-safe bowl, melt semisweet chocolate chips and cream cheese together in the microwave for 1 to 2 minutes. Mix well. Add 2 tablespoons of the chocolate mixture to the bananas, reserving the rest for later. Combine bananas and chocolate mixture, letting it cook for an additional minute. |
