4 ounces unsweetened cocoa powder
2 cups cake flour
1 teaspoon salt
2 teaspoons baking soda
1 teaspoon baking powder
2 eggs
1 cup freshly brewed coffee
1 cup whole milk
6 ounces semisweet chocolate, chopped
1 cup heavy cream
6 tablespoons butter

Instructions

    1. Preheat the oven to 350 degrees Fahrenheit and position the oven rack in the center. Prepare two 9-inch round cake pans by greasing them with butter and lining the bottoms with parchment paper circles.
    2. In a bowl, sift together the cocoa powder, cake flour, salt, baking soda, and baking powder.
    3. Using a standing electric mixer or mixing by hand, cream together the butter and sugar until smooth and creamy, about 5 minutes.
    4. Add the eggs one at a time, ensuring each is fully incorporated. Stop the mixer as needed to scrape down the sides for thorough mixing.
    5. Combine the coffee and milk. Gradually mix in half of the dry ingredients, followed by the coffee and milk, and then the remaining dry ingredients.
    6. Divide the batter evenly between the prepared cake pans and bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
    7. In a heatproof bowl set over simmering water, melt the chopped chocolate with the cream, stirring occasionally. Once melted, remove from heat and whisk in the butter until smooth. Allow the Ganache to cool to a spreadable consistency, approximately 1-2 hours at room temperature.
    8. Once the cakes are baked, let them cool completely in the pans before removing. Carefully invert one cake onto a cake plate, remove the parchment paper, and layer with icing. Top with the second cake layer and frost the top and sides generously for a beautifully decorated cake.
