Ingredients

1 34 cups sugar
1 14 teaspoon salt
1 cup cake flour
12 egg whites, room temperature
1.33 cups warm water
1 teaspoon vanilla
1 12 teaspoons cream of tartar
12 ounces milk chocolate, finely chopped
6 ounces heavy whipping cream
1 cup marshmallow fluff, store bought or homemade
12 cup graham cracker crumbs

Instructions

    1. Begin by processing sugar in a food processor until finely ground, about two minutes.
    2. In a medium bowl, sift together cake flour, salt, and half of the finely ground sugar. Set aside.
    3. Preheat the oven to 350ºF.
    4. In the bowl of a stand mixer, combine egg whites, water, vanilla, and cream of tartar. Whisk for 2 minutes until well combined. Gradually add the remaining sugar and beat until medium peaks form.
    5. Sprinkle portions of the flour mixture over the egg white mixture and gently fold in each time until all the flour is evenly incorporated.
    6. Transfer the mixture into an ungreased tube pan and bake for 35-40 minutes, until golden brown and fully cooked.
    7. Invert the cake pan and let the cake cool upside down inside the pan until completely cooled.
    8. Once cooled, loosen the cake by running a knife along the inner and outer edges of the pan, then invert it onto a cooling rack.
    9. For the ganache, finely chop chocolate and place it in a bowl. Heat cream until simmering and pour over the chocolate. Let it sit for 2 minutes, then stir until smooth. Let the ganache cool slightly.
    10. Place the cake on a cooling rack over the sink. Pour the ganache over the cake, spreading it evenly on top and sides.
    11. Sprinkle graham cracker crumbs along the bottom half of the cake.
    12. Top the cake with marshmallow creme, either spreading or piping it over the surface. Torch the marshmallow with a culinary torch for a finishing touch.
