200 | grams sugar |
2 | tablespoons all-purpose flour |

200 | grams quality dark chocolate (70%) |

For the Tenerina Cake
- Begin by breaking the quality dark chocolate into small pieces and melting it in a bain-marie or in the microwave until smooth, shiny, and glossy.
- While the chocolate is melting, whip the egg whites with a pinch of salt in a bowl until they form stiff and firm peaks.
- Melt the butter into the hot chocolate, stirring well, and allow it to cool. Preheat the oven to 180°C.
- In a separate bowl, beat the sugar and egg yolks until creamy and smooth. Sift the all-purpose flour into the bowl and mix until smooth.
- Add the chocolate and butter mixture to the sugar and egg mixture, beating until the batter is homogeneous and fluffy.
- Slowly fold in the whipped egg whites with a mixing spoon, gently incorporating them from top to bottom.
- Butter and flour a 24 cm diameter cake pan, pour the batter into it, and bake for 25-30 minutes.
- Once completely cooled, dust the Tenerina Cake with icing sugar for a beautiful presentation.
