100 grams butter (at room temperature/soft), cut into small pieces
200 grams sugar
2 tablespoons all-purpose flour
4 medium eggs
200 grams quality dark chocolate (70%)
icing sugar to decorate

Instructions

For the Tenerina Cake

1. Begin by breaking the quality dark chocolate into small pieces and melting it in a bain-marie or in the microwave until smooth, shiny, and glossy.
2. While the chocolate is melting, whip the egg whites with a pinch of salt in a bowl until they form stiff and firm peaks.
3. Melt the butter into the hot chocolate, stirring well, and allow it to cool. Preheat the oven to 180°C.
4. In a separate bowl, beat the sugar and egg yolks until creamy and smooth. Sift the all-purpose flour into the bowl and mix until smooth.
5. Add the chocolate and butter mixture to the sugar and egg mixture, beating until the batter is homogeneous and fluffy.
6. Slowly fold in the whipped egg whites with a mixing spoon, gently incorporating them from top to bottom.
7. Butter and flour a 24 cm diameter cake pan, pour the batter into it, and bake for 25-30 minutes.
8. Once completely cooled, dust the Tenerina Cake with icing sugar for a beautiful presentation.
