300 | milliliters buttermilk |
125 | grams coconut oil, melted |

1 | banana, mashed |
1 | tablespoon cinnamon |
1⁄2 | cup milk or white choc chips |
1 | apple, chopped |
1 | tablespoon cocoa powder |
1⁄2 | cup frozen blueberries or raspberries |
Instructions
1. | Begin by preheating the oven to 180 degrees Celsius. Prepare all the ingredients for the muffin base and place them into the bowl of a stand mixer. Mix slowly until well combined. |

2. | Introduce your chosen muffin flavourings, either by using the suggested options or exploring your own creativity. Continue to mix in the stand mixer at a medium speed until the ingredients are thoroughly combined, ensuring a textured consistency with some small lumps. |
3. | Evenly divide the mixture into a greased/lined 12-hole standard muffin tray or a 24-hole mini muffin tray. Bake for 20-25 minutes for standard-sized muffins, or 15-17 minutes for mini muffins. To check for doneness, insert a cake tester into the muffins - it should come out clean when they are ready. |
4. | Allow the muffins to cool in the tray for 5 minutes before transferring them to a wire rack to cool further. |
