Drunken Lentil Soup

Instructions
Creation of the Soup | |

1. | Rinse the lentils thoroughly and drain in a fine mesh sieve. |
2. | In a heavy saucepan, heat the olive oil over medium heat. Add the finely chopped onions and cook until translucent. |
3. | Introduce the cumin and sauté for 1 minute if desired. Increase the heat, then pour in the red wine. Allow it to simmer for 2 minutes. Stir in the lentils and let them cook for another minute. Pour in the vegetable broth, let it come to a boil for 2 minutes, then add the lemon juice and zest, along with water. Finally, add the garlic cloves. Mix well, reduce the heat to simmer, cover the pot with a tight-fitting lid, and let the soup cook for 15-20 minutes. |
4. | By this stage, the soup should have a thick, broken-down texture. Taste and season with salt and freshly cracked pepper to your liking. If the soup is thicker than desired, add more water and allow it to cook a few more minutes with the lid on. For extra richness, consider adding a splash more olive oil. |
5. | Serve the soup hot, drizzled with high-quality extra virgin olive oil, a crack of black pepper, and a squeeze of lemon juice. Alternatively, add a touch of ground cumin and a sprinkle of ground cayenne pepper for a spicy variation. |
