Instructions

For cookie preparation

1. Begin by whisking together the all-purpose flour, cardamom, nutmeg, ginger, cloves, cinnamon, and allspice in a mixing bowl.
2. In a separate bowl, cream the virgin coconut oil and light brown sugar until the mixture is light and fluffy. This can be achieved using a stand mixer or a hand-held mixer.
3. Add the egg, egg yolk, and vanilla to the sugar mixture, beating until fully incorporated.
4. Gradually add the flour mixture to the wet ingredients, mixing until just combined. Chill the dough for 45 minutes or overnight.
5. Preheat your oven to 350°F (180°C). Scoop the cookie dough into tablespoon-sized portions or roll into one-inch balls, then place them on parchment-lined baking sheets.
6. Bake the cookies for about 15 minutes, or until they are lightly golden. Allow them to cool completely on a wire rack before frosting.

For caramel cream cheese frosting

1. In a heavy pot, combine white or light brown sugar and water over medium-high heat. Stir until the mixture comes to a boil.
2. Once boiling, refrain from stirring and allow the mixture to bubble for approximately 7-10 minutes, or until it turns golden brown and emits a caramel aroma.
3. Remove the pot from the heat and stir in the unsalted butter until melted. Use a mixer on low speed to emulsify the mixture.
4. Add vanilla, cream cheese, and kosher salt to the caramel mixture. Beat until the frosting is creamy in texture.
5. Transfer the frosting to a heatproof bowl and allow it to cool. It will thicken as it cools, ready to be generously spread over the delicious cookies.
