Exquisite Cranberry Jello Salad
A delectable and sophisticated dessert that combines the refreshing flavors of cranberry and pineapple with a creamy cheese layer, all set in a delightful gelatin base.
Ingredients
1 | (4 ounce) can crushed pineapple, drained |

2 | (3 ounce) packages strawberry Jell-O gelatin dessert |
1 | (16 ounce) can canned whole cranberry sauce |
1 | (8 ounce) package cream cheese, softened |
1 | cup 1 cup evaporated milk |
1 | teaspoon 1 teaspoon vanilla |
1 | tablespoon 1 tablespoon unflavored gelatin |
1 | cup 1/4 cup cold water |
Instructions
1. | Begin by draining the pineapple, being sure to reserve the syrup. Add water to the syrup until you have 2 1/2 cups. Place 1 1/4 cups of the syrup mixture in a saucepan and bring it to a boil. Dissolve one package of Jell-O gelatin dessert in the boiling syrup mixture. Stir in half of the drained pineapple and half of the cranberry sauce. Mix thoroughly and pour the mixture into a 9 x 13 dish. Allow it to chill until firm. |

2. | In a separate bowl, beat the cream cheese with sugar until smooth. Gradually beat in the evaporated milk and vanilla. Soften the unflavored gelatin in the cold water and heat it until dissolved. Blend the gelatin into the cheese mixture, then pour it over the firm Jello layer. Chill the dish until this layer is also firm. |
3. | For the final layer, boil the remaining 1 1/4 cup of syrup mixture, then dissolve the remaining package of Jell-O gelatin dessert in it. Add the remaining crushed pineapple and cranberry sauce. Cool the mixture until it reaches room temperature. Gently pour this over the cheese layer and chill the dish until the final layer is firm. Once set, cut the dish into squares and serve. |
