1 | (8 ounce) carton (8 ounce) carton cottage cheese or cream cheese |

1 | lb dried pitted prunes |
3 | cups water |
1⁄2 | cup sugar (more or less to taste, use 1/4 fructose for sugar-free version) |

Preparation Instructions
- Blend the dough ingredients together using a pastry blender until well combined.
- Add milk as needed to soften the dough to the right consistency.
- Divide the dough into 4 small or 2 large balls, cover, and chill overnight.
- In a saucepan, cook the dried prunes in water until they are soft. Drain and either press them through a wire strainer or puree them in a blender.
- Add sugar to the prune mixture, stirring well to combine.
- Roll out the dough into a large square and cut it into 3-inch squares. Place a mound of the prune filling in the center of each square.
- With scissors, cut each corner from the top to within 1/2 inch of the center. Fold one half of each corner towards the center to create a star or pinwheel shape.
- Place the tarts on an ungreased baking sheet. Optionally, sprinkle coarse grain sugar over the tarts for added sweetness.
- Let the tarts stand for 10 minutes before baking.
- Bake the tarts in a preheated oven at 400°F (200°C) for 7 to 10 minutes, or until they are light golden brown (they should remain relatively pale).
- Remove the tarts from the oven and allow them to cool on a wire rack before serving.
