3 | tablespoons peanut oil, divided |
2 | tablespoons liquid honey |
4 | tablespoons dry sherry |
2 | tablespoons dark soy sauce |
1 | teaspoon Chinese five spice powder |
2 | garlic, finely chopped |
2 1⁄2 | cm fresh ginger, peeled and grated |
2 | tablespoons water |
Instructions

For Marinating Shrimp
- Combine 1 1/2 tablespoons of oil, honey, sherry, soy sauce, five-spice powder, garlic, and ginger in a bowl.
- Add the shrimp, ensuring they are coated evenly with the marinade. Cover and refrigerate for at least an hour or up to 8 hours.
- Remove the shrimp from the marinade, keeping the marinade aside.

For Stir-Frying
- Heat a wok over high heat until smoking, then add the remaining 1 1/2 tablespoons of oil.
- After a few seconds, add the shrimp and stir-fry for about a minute until pink.
- Pour in the reserved marinade and water. Cook briskly, stirring constantly for approximately two minutes.
- Remove the shrimp from the wok and continue cooking the sauce until it reduces and thickens, for about a minute.
- Serve the sauce over the shrimp.
