½ cup coconut milk
3 cups vegetable stock
1 stalk lemongrass, chopped
1 inch fresh gingerroot or galangal
3 kaffir lime leaves
1 cup cauliflower
2 tablespoons light soy sauce
1 teaspoon sugar (optional)
4 small chilies, crushed
2 tablespoons lemon juice
cilantro

Instructions

  • Preparation of Soup

    1. Heat the coconut milk with lemongrass, galangal, kaffir lime leaves, soy sauce, chilis, sugar, and vegetable stock.
    2. Simmer the mixture with the lid on for ten minutes, then strain the soup base.
    3. Return the strained soup base to the pot and simmer until the cauliflower is cooked al dente.
    4. Remove from heat and stir in the lemon juice.
    5. Serve in bowls, garnished with fresh cilantro.
    6. (Optional) Drizzle a teaspoon of sesame chili oil on top for an extra kick.
