- Heat the coconut milk with lemongrass, galangal, kaffir lime leaves, soy sauce, chilis, sugar, and vegetable stock.
- Simmer the mixture with the lid on for ten minutes, then strain the soup base.
- Return the strained soup base to the pot and simmer until the cauliflower is cooked al dente.
- Remove from heat and stir in the lemon juice.
- Serve in bowls, garnished with fresh cilantro.
