1 | cup diced heirloom tomatoes |
1 | cup diced kirby cucumbers |
1 | cup diced Candy onions |
1 | cup fresh blueberries |
1 | cup fresh raspberries |
1 | cup Cilantro Mint chutney* |
1 | cup extra virgin olive oil (EVOO) |
Juice of 1 lemon | |
1 | tablespoon Honey |
a couple of cracks of black pepper | |
Salt to taste |
Instructions
Preparation | |

1. | Blend all the ingredients for the dressing (except salt) in a small smoothie blender jar until smooth and creamy. |
2. | Cook the farro according to package instructions. Drain and mix with the tomatoes, cucumbers, and onions. Drizzle the dressing over the farro, toss well to coat. Adjust seasoning as needed. Gently fold in the blueberries and raspberries just before serving. |
