Fig and Walnut Loaf with a Hint of Brandy

Ingredients

1/2 cup unsalted butter at room temperature
1 cup granulated sugar
2 large eggs at room temperature
1 1/2 all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon cardamom
1 cup brandied figs chopped and slightly mashed, I added a tsp of the brandy syrup to the figs.
1 teaspoon vanilla extract
1/2 cup full fat sour cream
1/2 cup toasted walnuts rough chop

Instructions

    1. Begin by pre-heating the oven to 350 degrees Fahrenheit. Grease the bottom and sides of a 9x5x3 loaf pan. Prepare the figs by chopping and mashing them, then set aside. Toast the walnuts and give them a rough chop.
    2. In a large mixing bowl, cream the room temperature butter and granulated sugar until light and fluffy using a hand-held or stand mixer with a paddle attachment. Add the room temperature eggs one at a time, beating well after each addition. In a separate small mixing bowl, combine the all-purpose flour, salt, baking soda, and spices by whisking them together.
    3. Combine the dry ingredients with the butter and egg mixture, stirring until well-combined. Mix in the brandied figs, full-fat sour cream, vanilla extract, and toasted walnuts. Pour the batter into the loaf pan and bake for 60-70 minutes. To test for doneness, insert a tester or toothpick into the loaf – it should come out clean. Allow the loaf to cool in the pan for 10 minutes, then transfer it onto a cooling rack. Brush the top of the loaf with some of the fig syrup and let it cool completely before slicing.
