Ingredients

1 tablespoon olive oil
1 small yellow onion, chopped
3 garlic cloves, minced
1 cup long grain brown rice (not instant)
2 ½ fat-free low-sodium chicken broth or vegetable broth
salt & pepper, to taste

Instructions

1. Heat olive oil in a small skillet over medium-high heat. Add chopped onion and minced garlic, stirring occasionally until the onion turns golden, approximately 5 minutes.
2. Stir in the long grain brown rice and sauté for 1 minute to enhance the nutty flavor.
3. Pour in the fat-free low-sodium chicken broth or vegetable broth, season with salt and pepper to your preference, and bring the mixture to a boil. Cover the skillet, reduce the heat to low, and let it simmer.
4. Allow the rice to simmer gently until tender and most of the liquid is absorbed, which usually takes around 45-50 minutes. Remember to check the rice occasionally and add water if needed to prevent sticking.
5. Once the rice is cooked, uncover the skillet and let the pilaf stand for 5 minutes before serving to allow the flavors to meld.
