Golden Brown Rice Pilaf

A delicious and nutritious side dish featuring long grain brown rice, sautéed with fragrant onion and garlic in a flavorful broth seasoned to perfection.

1 | small yellow onion, chopped |
3 | garlic cloves, minced |
1 | cup long grain brown rice (not instant) |
2 ½ | fat-free low-sodium chicken broth or vegetable broth |

Instructions

- Heat olive oil in a small skillet over medium-high heat. Add chopped onion and minced garlic, stirring occasionally until the onion turns golden, approximately 5 minutes.
- Stir in the long grain brown rice and sauté for 1 minute to enhance the nutty flavor.
- Pour in the fat-free low-sodium chicken broth or vegetable broth, season with salt and pepper to your preference, and bring the mixture to a boil. Cover the skillet, reduce the heat to low, and let it simmer.
- Allow the rice to simmer gently until tender and most of the liquid is absorbed, which usually takes around 45-50 minutes. Remember to check the rice occasionally and add water if needed to prevent sticking.
- Once the rice is cooked, uncover the skillet and let the pilaf stand for 5 minutes before serving to allow the flavors to meld.
