1 head cauliflower, cut into florets
1 teaspoon salt
1 teaspoon mixed herbs
½ teaspoon ground black pepper
3 tablespoons olive oil
1 cup shredded Cheddar cheese
½ cup heavy whipping cream
1 tablespoon ghee (clarified butter)
1 pinch ground nutmeg
3 tablespoons grated Parmesan cheese

Instructions

    1. Preheat the oven to 450 degrees F (230 degrees C) and line a baking sheet with aluminum foil.
    2. Place the cauliflower florets on the prepared baking sheet. Sprinkle with salt, mixed herbs, and ground black pepper. Drizzle with olive oil and toss until the florets are thoroughly coated.
    3. Roast the cauliflower in the preheated oven until it is crisp, for about 10 to 15 minutes. Then transfer the roasted cauliflower to an 8-inch baking dish.
    4. In a saucepan over medium heat, combine the shredded Cheddar cheese, heavy whipping cream, ghee (clarified butter), and a pinch of ground nutmeg. Simmer the mixture until it becomes bubbly, around 5 minutes. Pour this creamy sauce over the roasted cauliflower and mix everything thoroughly. Sprinkle the grated Parmesan cheese on top.
