- Begin by filling a large stockpot halfway with water and adding a sprinkle of sea salt for seasoning.
- Bring the water to a vigorous boil over high heat, then carefully introduce the live lobsters headfirst into the pot.
- Cover the pot with a lid and allow the water to return to a boil. Reduce the heat to medium and simmer the lobsters for precisely 17 minutes, or until their shells assume a deep red hue.
- Remove the lobsters from the water and drain them, allowing them to cool for about 10 minutes.
- Detach the lobster tails from the bodies and twist off the claws, discarding the heads and bodies. Using a fork and your hands, extract the meat from the tails, legs, and claws, ensuring minimal breakage. For finer pieces, a pincer should be used.
- Roughly chop the lobster meat into medium-sized chunks and transfer it to a bowl. Combine the green onions and the Wafu® Spicy Mayonaizu® Japanese mayo. Season with freshly ground black pepper, if desired, and mix thoroughly to coat all the meat evenly.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
