2680 g whole live lobsters
Sea salt
½ green onion, finely chopped
6 tablespoons Wafu® Spicy Mayonaizu® Japanese mayo
Freshly ground black pepper
4 top-split hot dog buns

Instructions

    1. Begin by filling a large stockpot halfway with water and adding a sprinkle of sea salt for seasoning.
    2. Bring the water to a vigorous boil over high heat, then carefully introduce the live lobsters headfirst into the pot.
    3. Cover the pot with a lid and allow the water to return to a boil. Reduce the heat to medium and simmer the lobsters for precisely 17 minutes, or until their shells assume a deep red hue.
    4. Remove the lobsters from the water and drain them, allowing them to cool for about 10 minutes.
    5. Detach the lobster tails from the bodies and twist off the claws, discarding the heads and bodies. Using a fork and your hands, extract the meat from the tails, legs, and claws, ensuring minimal breakage. For finer pieces, a pincer should be used.
    6. Roughly chop the lobster meat into medium-sized chunks and transfer it to a bowl. Combine the green onions and the Wafu® Spicy Mayonaizu® Japanese mayo. Season with freshly ground black pepper, if desired, and mix thoroughly to coat all the meat evenly.
    7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
    8. Lightly toast the top-split hot dog buns and evenly distribute the lobster salad among them. Serve immediately to enjoy the exquisite flavors of this gourmet spicy lobster roll.
