- Begin by pouring hot water over quick-cooking oatmeal; set aside.
- In a mixing bowl, cream together packed brown sugar, granulated sugar, and shortening. Add in the large eggs.
- Sift together flour, baking soda, cinnamon, and salt. Gradually incorporate the dry ingredients into the sugar and shortening mixture.
- Stir in the soaked oatmeal and aromatic vanilla essence.
- Pour the batter into a greased 9 x 13 cake pan and bake at 350°F for approximately 1 hour and 10 minutes. Once baked, prepare the decadent topping.
- For the topping, combine margarine, milk, and packed brown sugar in a small saucepan. Bring the mixture to a gentle boil and simmer for 1 minute. Fold in coconut, walnuts, and uncooked oatmeal.
- Spread the prepared topping generously over the cake and carefully broil until golden brown. Be cautious as it can burn quickly.
