1 cup quick cooking oatmeal, soaked in hot water
1 ½ flour
1 teaspoon baking soda
1 cup packed brown sugar
1 teaspoon cinnamon
1 cup granulated sugar
½ teaspoon salt
½ cup shortening
1 teaspoon vanilla essence
2 large eggs
1 cup coconut
1 cup margarine
½ cup walnuts
3 tablespoons milk
1 ½ packed brown sugar
½ cup uncooked oatmeal

Instructions

    1. Begin by pouring hot water over quick-cooking oatmeal; set aside.
    2. In a mixing bowl, cream together packed brown sugar, granulated sugar, and shortening. Add in the large eggs.
    3. Sift together flour, baking soda, cinnamon, and salt. Gradually incorporate the dry ingredients into the sugar and shortening mixture.
    4. Stir in the soaked oatmeal and aromatic vanilla essence.
    5. Pour the batter into a greased 9 x 13 cake pan and bake at 350°F for approximately 1 hour and 10 minutes. Once baked, prepare the decadent topping.
    6. For the topping, combine margarine, milk, and packed brown sugar in a small saucepan. Bring the mixture to a gentle boil and simmer for 1 minute. Fold in coconut, walnuts, and uncooked oatmeal.
    7. Spread the prepared topping generously over the cake and carefully broil until golden brown. Be cautious as it can burn quickly.
