2 1/4 cups olive oil, divided
5 fresh rosemary sprigs
5 fresh oregano sprigs
2 teaspoons crushed red pepper flakes

Instructions

For Infusing Olive Oil Trio

1. Pour 3/4 cup of olive oil into each jar. Place fresh rosemary in the first jar, oregano in the second, and crushed red pepper flakes in the third. Secure the lids tightly.
2. Pour 4 cups of water into a multi-functional pressure cooker, such as the Instant Pot®. Carefully place the jars in the water. Seal the lid, ensuring it is locked in place. Select high pressure as per the manufacturer's instructions and set the timer for 0 minutes. Allow 10 to 15 minutes for the pressure to build.
3. Release the pressure cautiously using the quick-release method, following the manufacturer's instructions, which should take around 3 minutes.
4. Once safe, open the lid and allow the jars to cool for 30 minutes before handling. Strain the infused oil into bottles and seal to preserve the flavors.
