Ingredients

1 ½ lbs halibut steaks, cut into 8 pieces
¼ cup chicken stock or ¼ vegetable stock
2 tablespoons lemon juice
3 medium garlic cloves, pressed
2 tablespoons capers
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh tarragon
1 tablespoon chopped fresh chives
salt and pepper

Instructions

1. Preheat the oven to 450°F.
2. Arrange the halibut steaks in a baking dish that fits them comfortably.
3. In a bowl, combine chicken stock or vegetable stock, lemon juice, pressed garlic cloves, capers, fresh parsley, fresh tarragon, fresh chives, salt, and pepper. Mix well.
4. Pour the herb mixture evenly over the halibut.
5. Cover the baking dish and bake for approximately 15 minutes, ensuring not to overcook.
6. To check for doneness, gently insert the tip of a knife into the center of the fish. The halibut should flake easily while remaining moist.
7. Remove from the oven just before reaching the desired level of doneness, as the fish will continue to cook from residual heat.
8. Serve immediately, drizzling the pan juices over the herb-infused halibut steaks.
