Herbed Baked Halibut

A quick and flavorful dish featuring halibut steaks baked with a blend of herbs for a delicious and moist result.

1 ½ | lbs halibut steaks, cut into 8 pieces |

¼ | cup chicken stock or ¼ vegetable stock |
2 | tablespoons lemon juice |
3 | medium garlic cloves, pressed |
2 | tablespoons capers |
2 | tablespoons chopped fresh parsley |
1 | tablespoon chopped fresh tarragon |
1 | tablespoon chopped fresh chives |
salt and pepper |
Instructions

- Preheat the oven to 450°F.
- Arrange the halibut steaks in a baking dish that fits them comfortably.
- In a bowl, combine chicken stock or vegetable stock, lemon juice, pressed garlic cloves, capers, fresh parsley, fresh tarragon, fresh chives, salt, and pepper. Mix well.
- Pour the herb mixture evenly over the halibut.
- Cover the baking dish and bake for approximately 15 minutes, ensuring not to overcook.
- To check for doneness, gently insert the tip of a knife into the center of the fish. The halibut should flake easily while remaining moist.
- Remove from the oven just before reaching the desired level of doneness, as the fish will continue to cook from residual heat.
- Serve immediately, drizzling the pan juices over the herb-infused halibut steaks.
