Instructions

- Preheat the oven to 200°F (93°C).
- Combine shiitake mushrooms, leek, bay leaves, garlic, thyme sprigs, and kosher salt in a small, heavy, oven-safe pot with a lid.
- Bake with the lid on for 6 hours, or until the oil is highly fragrant.
