Ingredients

10 ounces shiitake mushrooms
1 leek, cleaned and quartered
2 bay leaves
2 small cloves garlic, whole and peeled
ounce thyme sprigs
1 pinch pinch of kosher salt
2 cups grapeseed oil

Instructions

1. Preheat the oven to 200°F (93°C).
2. Combine shiitake mushrooms, leek, bay leaves, garlic, thyme sprigs, and kosher salt in a small, heavy, oven-safe pot with a lid.
3. Bake with the lid on for 6 hours, or until the oil is highly fragrant.
4. Allow the mixture to cool, then strain the oil. Store in an airtight container for up to 2 weeks.
