2 | bay leaves |
2 | small cloves garlic, whole and peeled |
⅓ | ounce thyme sprigs |
1 | pinch pinch of kosher salt |
2 | cups grapeseed oil |
Instructions
1. | Preheat the oven to 200°F (93°C). |

2. | Combine shiitake mushrooms, leek, bay leaves, garlic, thyme sprigs, and kosher salt in a small, heavy, oven-safe pot with a lid. |
3. | Bake with the lid on for 6 hours, or until the oil is highly fragrant. |
4. | Allow the mixture to cool, then strain the oil. Store in an airtight container for up to 2 weeks. |
