For the Hake

2 tablespoons all-purpose flour
4 hake fillets (about 5 oz each)
4 tablespoons extra virgin olive oil
12 cup dry white wine (white Rioja suggested)
2 large garlic cloves, finely chopped
6 scallions, finely sliced
2 tablespoons fresh parsley, finely chopped

Instructions

For Cooking the Hake

1. Preheat the oven to 450°F (230°C).
2. Generously season the flour with salt and pepper. Dredge the skin side of the hake fillets in the seasoned flour, shaking off the excess.
3. Heat a shallow flameproof casserole over high heat. Add olive oil and heat until hot.
4. Add the hake fillets, skin side down, and cook for 3 minutes until golden brown. Turn the fish over, season with salt and pepper.
5. Pour in the white wine, add garlic, scallions, and parsley.
6. Transfer the casserole to the oven and bake, uncovered, for 5 minutes until the fish flakes easily.
