Instructions

For Cooking the Hake
- Preheat the oven to 450°F (230°C).
- Generously season the flour with salt and pepper. Dredge the skin side of the hake fillets in the seasoned flour, shaking off the excess.
- Heat a shallow flameproof casserole over high heat. Add olive oil and heat until hot.
- Add the hake fillets, skin side down, and cook for 3 minutes until golden brown. Turn the fish over, season with salt and pepper.
- Pour in the white wine, add garlic, scallions, and parsley.
- Transfer the casserole to the oven and bake, uncovered, for 5 minutes until the fish flakes easily.
