Pan-Seared Catfish with Mustard-Dill Sauce

1 | lb catfish fillet, thawed if frozen |

3/4 | teaspoon lemon pepper |
1 | tablespoon butter or margarine |
1 | medium shallot, sliced |
2 | teaspoons mustard seeds |
2/3 | cup chicken broth |
1 | teaspoon Dijon mustard |
3 1/2 | teaspoons cornstarch |
1 | tablespoon chopped fresh dill |
1 | tablespoon lemon juice |
Instructions

- Preheat the oven to 400 degrees Fahrenheit.
- Prepare a shallow baking dish by coating it with nonstick cooking spray.
- Pat the catfish fillets dry with paper towels.
- Sprinkle the fillets with lemon pepper and place them in the prepared baking dish.
- Bake for 8-10 minutes or until the fish flakes easily with a fork.
- Meanwhile, in a medium skillet over medium heat, melt the butter.
- Add the sliced shallot and mustard seeds, and cook and stir for 2 minutes.
- In a small bowl, stir together the Dijon mustard and cornstarch with the chicken broth.
- Add the broth mixture to the skillet and cook, stirring, until thickened.
- Stir in the chopped fresh dill, then drizzle the sauce over the baked catfish fillets and serve.
