1⁄2 | cup arrowroot flour |

1⁄2 | teaspoon cinnamon |
Instructions
1. | Begin by preheating the oven to 180ºC/350ºF. |

2. | Prepare a muffin pan by lining it with paper baking cups. |
3. | In a large bowl, vigorously whisk together the brown sugar and olive oil for approximately 2 minutes until well combined. |
4. | Add the steamed and pureed pumpkin, along with the vibrant zest and juice of an orange, to the sugar-oil mixture; thoroughly blend all ingredients. |
5. | In a separate bowl, combine the rice flour, arrowroot flour, and baking powder; gradually incorporate this dry mixture into the pumpkin batter, mixing until a smooth consistency is achieved. |
6. | To enhance the flavors, introduce the vanilla extract and a hint of cinnamon to the batter; ensure thorough mixing to evenly distribute the spices. |
7. | Carefully fill each muffin cup with the prepared batter. |
8. | Place the muffin pan in the preheated oven and bake for approximately 30 minutes, or until the muffins are cooked through and a toothpick inserted comes out clean. |
