Instructions

1. Begin by preheating the oven to 180ºC/350ºF.
2. Prepare a muffin pan by lining it with paper baking cups.
3. In a large bowl, vigorously whisk together the brown sugar and olive oil for approximately 2 minutes until well combined.
4. Add the steamed and pureed pumpkin, along with the vibrant zest and juice of an orange, to the sugar-oil mixture; thoroughly blend all ingredients.
5. In a separate bowl, combine the rice flour, arrowroot flour, and baking powder; gradually incorporate this dry mixture into the pumpkin batter, mixing until a smooth consistency is achieved.
6. To enhance the flavors, introduce the vanilla extract and a hint of cinnamon to the batter; ensure thorough mixing to evenly distribute the spices.
7. Carefully fill each muffin cup with the prepared batter.
8. Place the muffin pan in the preheated oven and bake for approximately 30 minutes, or until the muffins are cooked through and a toothpick inserted comes out clean.
9. Upon removing the muffins from the oven, generously sprinkle granulated brown sugar over the tops for a delightful crunch and added sweetness.
