Ingredients

4 cold cooked rice
12 cup finely chopped celery
14 cup finely chopped green pepper
12 cup sliced ripe olives
2 teaspoons grated onions
12 cup canola oil or olive oil
14 cup cider vinegar
1 teaspoon salt
14 teaspoon pepper
14 teaspoon sugar
14 teaspoon dry mustard
1 dash ground marjoram
1 12 cooked ham, cut into thin julienne strips
1 12 Swiss cheese, cut into thin julienne strips

Instructions

1. In a large mixing bowl, combine the cold cooked rice, finely chopped celery, finely chopped green pepper, sliced ripe olives, and grated onions.
2. In a small bowl, combine the canola oil or olive oil, cider vinegar, salt, pepper, sugar, dry mustard, and ground marjoram. Blend thoroughly and pour over the rice mixture. Mix well.
3. Cover the bowl and refrigerate the salad until well chilled.
4. Before serving, toss in the cooked ham and Swiss cheese.
5. Line a salad bowl with lettuce leaves, then fill the bowl with the rice salad.
6. Garnish with tomato wedges, if desired.
