4 | cold cooked rice |

1⁄2 | cup finely chopped celery |
1⁄4 | cup finely chopped green pepper |
1⁄2 | cup sliced ripe olives |
2 | teaspoons grated onions |
1⁄2 | cup canola oil or olive oil |
1⁄4 | cup cider vinegar |
1 | teaspoon salt |
1⁄4 | teaspoon pepper |
1⁄4 | teaspoon sugar |
1⁄4 | teaspoon dry mustard |
1 | dash ground marjoram |
1 1⁄2 | cooked ham, cut into thin julienne strips |
1 1⁄2 | Swiss cheese, cut into thin julienne strips |

Instructions

- In a large mixing bowl, combine the cold cooked rice, finely chopped celery, finely chopped green pepper, sliced ripe olives, and grated onions.
- In a small bowl, combine the canola oil or olive oil, cider vinegar, salt, pepper, sugar, dry mustard, and ground marjoram. Blend thoroughly and pour over the rice mixture. Mix well.
- Cover the bowl and refrigerate the salad until well chilled.
- Before serving, toss in the cooked ham and Swiss cheese.
- Line a salad bowl with lettuce leaves, then fill the bowl with the rice salad.
- Garnish with tomato wedges, if desired.
