Ingredients

1 whole turkey (13 lb)
kitchen twine to tie the turkey
aluminum foil
2 cups butter, softened
1 12 ounces fresh sage
1 lb bacon, uncooked
1 onion
1 garlic clove
salt to taste
pepper to taste

Instructions

  • For preparing the turkey

    1. Preheat the oven to 325°F (165°C).
    2. Begin by removing the giblets and neck from the turkey. Rinse the turkey with cold running water, then drain well and pat dry with paper towels.
    3. Chop the onion and garlic, then mix them together. Stuff the onion and garlic mixture into the cavity of the turkey.
    4. Secure the turkey's wings, legs, and drumsticks by tying them with kitchen twine as desired.
    5. Chop the sage and combine it with the softened butter.
    6. Carefully rub the sage and butter mixture under the turkey's skin and over the skin's surface.
    7. Season the turkey with salt and pepper to your preference.
    8. Cover the turkey's skin with uncooked bacon slices, pressing them onto the buttered surface.
    9. Insert an oven-safe meat thermometer into the inner thigh area near the breast, ensuring it does not touch the bone.
    10. Place the prepared turkey in a roasting pan and tent it with aluminum foil.
    11. Remove the foil tent during the last hour of cooking.
    12. Allow the turkey to cook, crisping the bacon for an additional 15 minutes before removing. (You may chop the cooked bacon separately if desired.)
    13. Once the turkey's internal temperature reaches 160°F (70°C), take it out of the oven.
    14. Let the turkey rest for 20-30 minutes before carving. During this resting period, the turkey will continue to cook to reach an internal temperature of 165°F (75°C).
