Savory Greens and Sunflower Seed Tart

 A delightful and nutritious tart featuring a mix of kale, chard, and crunchy sunflower seeds, bound together with eggs and cheese.
Ingredients
| 3 | tablespoons Olive Oil |

| 1 1⁄2 | Chard and/or Kale, washed, trimmed and cut into smallish pieces | 
| • | salt | 
| • | pepper | 
| 1 | egg, lightly beaten | 
| 1 | cup Shredded Parmigiano-Reggiano | 
| 3 | tablespoons Whole Wheat Flour | 
| 3 | tablespoons Apple Cider Vinegar | 
| 1⁄4 | cup Sunflower seeds | 
Instructions
| 1. | Preheat the oven to 400°F. |

| 2. | In a large pan, heat olive oil over medium heat. Add the chard and kale, season with salt and pepper as the greens wilt. Remove from heat after 3-5 minutes and set aside. | 
| 3. | In a medium-sized bowl, combine the beaten egg, shredded Parmigiano-Reggiano, and whole wheat flour. Stir in the apple cider vinegar. | 
| 4. | Mix the sautéed greens and sunflower seeds into the egg mixture until well combined. | 
| 5. | Grease an 8 or 9-inch springform or tart pan. | 
| 6. | Spread the mixture evenly in the pan, pressing down firmly. | 
| 7. | Bake for about 10 minutes, or until the egg is set and the cheese is melted. Allow the tart to rest for a few minutes before removing the springform ring. Slice and serve warm or at room temperature. |
