A delightful and nutritious tart featuring a mix of kale, chard, and crunchy sunflower seeds, bound together with eggs and cheese.

Ingredients

3 tablespoons Olive Oil
1 ½ Chard and/or Kale, washed, trimmed and cut into smallish pieces
salt
pepper
1 egg, lightly beaten
1 cup Shredded Parmigiano-Reggiano
3 tablespoons Whole Wheat Flour
3 tablespoons Apple Cider Vinegar
¼ cup Sunflower seeds

Instructions

1. Preheat the oven to 400°F.
2. In a large pan, heat olive oil over medium heat. Add the chard and kale, season with salt and pepper as the greens wilt. Remove from heat after 3-5 minutes and set aside.
3. In a medium-sized bowl, combine the beaten egg, shredded Parmigiano-Reggiano, and whole wheat flour. Stir in the apple cider vinegar.
4. Mix the sautéed greens and sunflower seeds into the egg mixture until well combined.
5. Grease an 8 or 9-inch springform or tart pan.
6. Spread the mixture evenly in the pan, pressing down firmly.
7. Bake for about 10 minutes, or until the egg is set and the cheese is melted. Allow the tart to rest for a few minutes before removing the springform ring. Slice and serve warm or at room temperature.
