Instructions
1. | Begin by grilling the red bell peppers on the hot side of a grill, preferably using hardwood charcoal, until the skins are blistered and blackening, which should take around 25-30 minutes. Carefully transfer the grilled peppers to a large, deep bowl and promptly cover it with plastic wrap. Allow the peppers to cool until they are safe to handle. |

2. | Peel the peppers over the bowl to capture their smoky juices. Remove the seeds and stems, then tear the peppers into wide pieces. Season with a couple of pinches of salt, followed by the dry red wine, and gently combine.
