A delicious and versatile smoky red pepper relish recipe that will elevate any dish with its intense flavors and vibrant color.

Ingredients

6 red bell peppers, seeded and blistered
Kosher or sea salt
½ cup dry red wine

Instructions

1. Begin by grilling the red bell peppers on the hot side of a grill, preferably using hardwood charcoal, until the skins are blistered and blackening, which should take around 25-30 minutes. Carefully transfer the grilled peppers to a large, deep bowl and promptly cover it with plastic wrap. Allow the peppers to cool until they are safe to handle.
2. Peel the peppers over the bowl to capture their smoky juices. Remove the seeds and stems, then tear the peppers into wide pieces. Season with a couple of pinches of salt, followed by the dry red wine, and gently combine. Transfer the peppers along with the flavorful liquid into a jar or jars, and refrigerate for up to one week.
