These Spicy Carolina BBQ Peppers are a guaranteed hit with any crowd. For a milder option, remove the seeds before cooking.

Ingredients

2 cups corn oil
2 cups cider vinegar
2 cups white sugar
4 cups ketchup
1 pound fresh jalapeno peppers, sliced into rings
1 pinch dried oregano
1 clove garlic, minced

Instructions

1. In a large pot, combine the corn oil, cider vinegar, white sugar, and ketchup, stirring until the sugar is completely dissolved. Bring the mixture to a boil, then add the fresh jalapeno peppers. Reduce the heat to low and simmer for 10 minutes. Season with a pinch of dried oregano and minced garlic.
2. Carefully ladle the mixture into sterile pint jars, ensuring to leave 1/4 inch of space at the top. Wipe the jar rims with a clean dry towel, then seal the jars with lids and rings. Process the jars in a hot water bath for 10 minutes to ensure proper sealing. Refrigerate any jars that do not seal properly.
