Experience a burst of flavors with this Spicy Tamarind-Ginger Glaze. An exotic blend of tangy tamarind, fiery ginger, and aromatic spices come together to create a versatile sauce that will elevate your dishes to a whole new level.

Ingredients

100 grams dried tamarind*
4 inch piece fresh ginger root, grated fine
6-7 Thai green chilies, chopped fine (deseed and adjust quantity based on heat tolerance)
¼ teaspoon asafetida (optional)*
½ teaspoon molasses or brown sugar to taste
2 teaspoons coconut, rice bran or sunflower oil
1 teaspoon black mustard seeds
½ teaspoon ground turmeric
salt to taste

Instructions

1. Soak the dried tamarind in hot water to soften. Once cooled, extract the pulpy juice by squeezing the fruit and discard the fiber.
2. Heat oil in a pan over medium heat. Add mustard seeds and cover until they start popping. Remove from heat and add the remaining ingredients.
3. Simmer on medium heat until the sauce thickens and the chilies soften. Adjust seasoning to taste, then bottle the sauce and drizzle with remaining oil. Refrigerate for up to a week.
