Vibrant Summer Quinoa Salad

2 | ripe tomatoes |
1 | ripe avocado |
2 | juice of fresh limes |
1 | ripe mango |
1 | 15.5 oz.can (15.5 oz) can of black beans, drained and rinsed |
1 | cup quinoa |
¼ | teaspoon chipotle chile powder |
¼ | teaspoon chili powder |
⅛ | teaspoon cayenne chili powder |
½ | teaspoon ground cumin |
salt, to taste |
Instructions
1. | Begin by rinsing one cup of quinoa under running water to remove any bitterness. In a saucepan, bring two cups of water to a boil. Add the quinoa to the boiling water, reduce heat to low, cover, and simmer until the quinoa is soft and translucent. |

2. | While the quinoa is cooking, prepare the corn by cooking it until tender. Let it cool before proceeding. |
3. | Next, carefully chop the avocado, tomatoes, and mango into uniform cubes and place them in a large mixing bowl. |
4. | Using a sharp knife, slice the corn kernels off the cob. Add the fresh corn kernels to the bowl of mixed veggies. |
5. | Once the quinoa is cooked, fluff it with a fork and add it to the bowl with the vegetable mixture. |
6. | Rinse and drain the black beans, then add them to the bowl along with the quinoa and veggies. |
7. | Season the salad with chipotle chile powder, chili powder, cayenne chili powder, cumin, and freshly squeezed lime juice. Mix well to combine all the vibrant flavors. Season with salt to taste and enjoy the explosion of flavors! |
