Instructions

1. Prepare the Vibrant Superfood Salad:

In a large bowl, combine the chopped Lacinato Kale, cooked Quinoa, cooked Orange or Green Lentils, canned Black Beans (rinsed & drained), Dried Golden Raisins, chopped Dried Prunes, chopped Walnuts, unsalted shelled Sunflower Seeds, diced Fresh Mango, and Fresh Squeezed Lemon Juice (approx. 3 lemons).
3. Prepare the Vibrant Superfood Dressing:
4. Place Good Quality Olive Oil, Rice Wine Vinegar, Sesame Oil, Lemon Zest, Bragg Liquid Aminos (Vegan/Gluten Free) or Soy Sauce, and peeled & chopped Fresh Ginger in a blender or Vitamix.
5. Blend the dressing for 1 to 2 minutes, or until the ginger has liquefied.
6. Drizzle the dressing over the Vibrant Superfood Salad ingredients.
7. Gently toss the salad to combine all the flavors.
8. Chill the salad for at least one hour before serving to let the flavors mingle.
