Instructions

- Prepare the Vibrant Superfood Salad:
- In a large bowl, combine the chopped Lacinato Kale, cooked Quinoa, cooked Orange or Green Lentils, canned Black Beans (rinsed & drained), Dried Golden Raisins, chopped Dried Prunes, chopped Walnuts, unsalted shelled Sunflower Seeds, diced Fresh Mango, and Fresh Squeezed Lemon Juice (approx. 3 lemons).
- Prepare the Vibrant Superfood Dressing:
- Place Good Quality Olive Oil, Rice Wine Vinegar, Sesame Oil, Lemon Zest, Bragg Liquid Aminos (Vegan/Gluten Free) or Soy Sauce, and peeled & chopped Fresh Ginger in a blender or Vitamix.
- Blend the dressing for 1 to 2 minutes, or until the ginger has liquefied.
- Drizzle the dressing over the Vibrant Superfood Salad ingredients.
- Gently toss the salad to combine all the flavors.
- Chill the salad for at least one hour before serving to let the flavors mingle.
