Instructions

1. Begin by prepping all the vegetables: shred the cabbage, dice the potatoes and onions, cut the carrots into rounds, and cube the beets. For added nutrition, introducing two cans of cooked beans to the recipe is an excellent option.
2. Combine the prepared cabbage and potatoes in a pot, along with water and your choice of chicken, beef, or pork broth.
3. Bring the broth and vegetable mixture to a boil over high heat.
4. Separately, sauté the sliced beets until they soften. To retain their vibrant colour, add a tablespoon of vinegar, and for a flavourful hint, toss in a teaspoon of sugar and a pinch of salt.
5. Stir in the diced tomatoes, add salt and black pepper to taste, and if you like, cayenne or chilli. Continue to cook for another 5 minutes.
6. Shift the sautéed vegetables into the boiling pot and let the soup cook for 15 more minutes.
7. For the final touch, serve the delectable Borscht soup adorned with a dollop of sour cream and fresh dill.
8. Note: Remember, beets are prone to staining, so peel and slice them with caution to avoid any unnecessary mess.
9. For a vegetarian version of this dish, simply substitute the chicken broth with water.
