A delicious and hearty traditional Russian soup made with beets, cabbage, potatoes, and a variety of vegetables.

Ingredients

4 cups cabbage, shredded
3 cups water
3 cups chicken broth
3-4 medium potatoes, diced
3 chicken bouillon cubes chicken bouillon cubes
1-2 big carrots, cut into rounds
1/2 medium yellow onion, diced
2 large fresh beets, shredded
1 (16 ounce) can (16 ounce) can) Italian-style diced tomatoes, drained
2 cloves garlic, minced
fresh dill (optional)
sour cream (optional)

Instructions

    1. Prepare the vegetables by shredding the cabbage, dicing the potatoes, onions, and carrots, and shredding the beets.
    2. In a pot, combine the cabbage and potatoes with water, chicken broth, and chicken bouillon cubes.
    3. Bring the mixture to a boil over high heat.
    4. In a separate pan, sauté the onions, beets, and carrots for 5-7 minutes.
    5. Add diced tomatoes and salt to taste, and cook for an additional 5 minutes.
    6. Transfer the sautéed vegetables to the pot and boil for 15 minutes.
    7. Turn off the heat and stir in minced garlic. Serve the soup with a dollop of sour cream and fresh dill.
    8. Note: Beets can stain everything, so peel and slice them carefully to prevent staining.
    9. For a vegetarian version, replace chicken broth with water and omit the chicken bouillon for a delicious alternative.
