Ingredients

1 large onion, chopped
2 tablespoons butter or margarine
4 hot cooked long-grain rice
2 sour cream
1 cup small curd cottage cheese
½ teaspoon salt
teaspoon pepper
2 (4 ounce) cans chopped green chilies, drained
2 cups shredded cheddar cheese

Instructions

1. In a large skillet, sauté the chopped onion in butter until tender.
2. Remove the skillet from the heat.
3. Combine the cooked rice, sour cream, cottage cheese, salt, and pepper in the skillet.
4. Spread half of the rice mixture evenly into a greased 11-inch x 7-inch x 2-inch baking dish.
5. Layer half of the drained green chilies and shredded cheddar cheese on top. Repeat the layers.
6. Bake, uncovered, at 375°F for 20-25 minutes or until the dish is heated through and the cheese is bubbly.
