Cheesy Green Chili Rice Bake
A delicious and hearty dish made with rice, green chilies, and gooey melted cheese.
Ingredients
1 | large onion, chopped |

2 | tablespoons butter or margarine |
4 | hot cooked long-grain rice |
2 | sour cream |
1 | cup small curd cottage cheese |
½ | teaspoon salt |
⅛ | teaspoon pepper |
2 | (4 ounce) cans chopped green chilies, drained |
2 | cups shredded cheddar cheese |
Instructions
1. | In a large skillet, sauté the chopped onion in butter until tender. |

2. | Remove the skillet from the heat. |
3. | Combine the cooked rice, sour cream, cottage cheese, salt, and pepper in the skillet. |
4. | Spread half of the rice mixture evenly into a greased 11-inch x 7-inch x 2-inch baking dish. |
5. | Layer half of the drained green chilies and shredded cheddar cheese on top. Repeat the layers. |
6. | Bake, uncovered, at 375°F for 20-25 minutes or until the dish is heated through and the cheese is bubbly. |
