Ingredients

1 cup small dried red beans
1 onion, chopped
2 garlic, minced
1 small dried red chili
1 coconut milk
4 vegetarian broth or water
2 long-grain white rice
salt, to taste

Instructions

    1. Inspect the dried red beans, removing any debris. Rinse and drain the beans thoroughly.
    2. In a large 6-quart pot, combine the cleaned red beans, chopped onion, minced garlic, whole dried red chili, coconut milk, and vegetarian broth.
    3. Bring the mixture to a gentle boil, then reduce the heat to low, cover, and simmer until the beans are almost tender when pressed, approximately 75-90 minutes.
    4. Stir in the long-grain white rice, cover, and continue cooking over low heat until the rice is tender and most of the liquid is absorbed, for about 30 minutes. If needed, add a splash of extra broth or water to prevent sticking.
    5. Remove and discard the dried red chili. Season the dish with salt to taste.
