For the Citrus Glazed Tofu

3 tablespoons olive oil, divided
1 (8 ounce) package extra firm tofu, drained and pressed
2 cloves garlic, minced
2 green onions, chopped
1/4 cup 1/4 cup water
2 tablespoons orange juice
1 tablespoon lemon juice
1 1/2 tablespoons vinegar
2 tablespoons soy sauce
1/4 cup packed brown sugar
1/2 teaspoon red pepper flakes
2 teaspoons cornstarch
1 tablespoon water
hot cooked rice

Instructions

  • For the Citrus Glazed Tofu

    1. Prepare the tofu by cutting it into bite-sized pieces. In a skillet, sauté the tofu in 2 tablespoons of olive oil until golden brown.
    2. In a small saucepan, sauté minced garlic and chopped green onions in the remaining 1 tablespoon of olive oil until the garlic is golden.
    3. Add 1/4 cup of water, orange juice, lemon juice, vinegar, soy sauce, brown sugar, and red pepper flakes to the saucepan. Bring the mixture to a boil, then reduce the heat to medium.
    4. In a small cup, mix cornstarch and 1 tablespoon of water until well blended. Slowly pour the cornstarch mixture into the sauce, stirring constantly.
    5. Continue cooking and stirring over medium heat until the sauce thickens to your desired consistency. Remove from heat and toss the tofu in the citrus glaze until well coated.
    6. Serve the citrus glazed tofu over hot cooked rice. Feel free to customize the dish by adjusting the thickness of the sauce or adding extra flavors like ginger, orange peel, or orange juice concentrate. Enjoy!
