Instructions

For marinating and steaming the fish
- Combine pineapple juice, orange juice, soy sauce, ginger, sesame oil, and cayenne pepper in an 8x8x2" glass baking dish.
- Add sea bass fillets to the marinade, turning them to coat evenly.
- Chill the fish in the marinade for 2 hours, turning occasionally.
- Set up a steamer rack in a large skillet.
- Arrange the marinated fish on the rack.
- Pour the remaining marinade into the skillet under the rack and bring it to a boil.
- Cover the skillet and steam the fish until just opaque in the center, approximately 8 minutes.
