Ingredients

For marinating the sea bass

½ cup pineapple juice
½ cup orange juice
cup soy sauce
3 tablespoons fresh ginger, finely chopped and peeled
2 tablespoons oriental sesame oil
teaspoon cayenne pepper

For serving

4 sea bass fillets (6 ounce each)
chopped green onion

Instructions

  • For marinating and steaming the fish

    1. Combine pineapple juice, orange juice, soy sauce, ginger, sesame oil, and cayenne pepper in an 8x8x2" glass baking dish.
    2. Add sea bass fillets to the marinade, turning them to coat evenly.
    3. Chill the fish in the marinade for 2 hours, turning occasionally.
    4. Set up a steamer rack in a large skillet.
    5. Arrange the marinated fish on the rack.
    6. Pour the remaining marinade into the skillet under the rack and bring it to a boil.
    7. Cover the skillet and steam the fish until just opaque in the center, approximately 8 minutes.
  • Finishing touches

    1. Transfer the steamed sea bass fillets to serving plates.
    2. Remove the steamer rack from the skillet.
    3. Boil the marinade until it reduces enough to coat a spoon, about 6 minutes.
    4. Drizzle the reduced marinade over the fish.
    5. Garnish with chopped green onions before serving.
