For the dressing

1 cup butter
2 chopped onions
2 chopped celery
1/4 cup fresh parsley
13 slightly dry bread cubes, mixed whole wheat and white
1 teaspoon poultry seasoning
1 1/2 teaspoons salt
1 1/2 teaspoons sage
1 teaspoon dried thyme
1/2 teaspoon pepper
1/2 teaspoon marjoram
2 (14 ounce) cans low sodium chicken broth
2 eggs, beaten

Instructions

  • For the dressing

    1. In a skillet, melt the butter and sauté the onions, celery, and fresh parsley until fragrant.
    2. Pour the sautéed mixture over the slightly dry bread cubes in a very large mixing bowl.
    3. Add the poultry seasoning, salt, sage, thyme, pepper, and marjoram, then toss everything together well.
    4. Pour in the low sodium chicken broth and the beaten eggs, mixing everything together thoroughly.
    5. Lightly pack the mixture into the crock pot.
    6. Cover and cook on high for 45 minutes, then reduce the heat to low and continue cooking for 4-8 hours, as crock pots may vary in cooking times.
