1 | pound butternut squash, peeled, seeded and cubed |
1 | potato, diced |
3 | vegetable stock |
1 | bay leaf |
1⁄2 | teaspoon dried thyme |
1⁄2 | teaspoon sea salt |
1⁄4 | teaspoon nutmeg |
1⁄2 | cup cream |
salt and pepper to taste |
Instructions
1. | Begin by combining the chopped onion, celery, garlic, and apple juice in a large soup pot. Cover and simmer for 10 minutes. |
