Ingredients

1 cup chopped onion
1 celery stalk, chopped
1 garlic clove, minced
1 cup unsweetened apple juice
1 pound butternut squash, peeled, seeded and cubed
1 potato, diced
3 vegetable stock
1 bay leaf
12 teaspoon dried thyme
12 teaspoon sea salt
14 teaspoon nutmeg
12 cup cream
salt and pepper to taste

Instructions

1. Begin by combining the chopped onion, celery, garlic, and apple juice in a large soup pot. Cover and simmer for 10 minutes.
2. Add the cubed butternut squash, diced potato, vegetable stock, bay leaf, dried thyme, sea salt, and nutmeg to the pot. Bring to a gentle boil, cover, then reduce the heat and simmer for 20 to 25 minutes.
3. Once the squash and potatoes are very soft, remove the pot from the heat. Using a blender or food processor, puree the soup in batches with the cream until smooth. Reheat gently and season with salt and pepper.
