pounds cabbage, shredded (or sauerkraut, rinsed in cold water and squeezed dry)

cup tomato juice

sour cream (optional)

Instructions

1. In a deep soup pot over medium heat, add the ground beef and cover with water. Boil for 1 to 2 hours until the meat is tender.
2. Once the meat is almost done, add the onion, carrot, bell pepper, and potatoes. Let them simmer together.
3. When the potatoes are soft, add the shredded cabbage (or sauerkraut), salt, pepper, and tomato juice. Cook until the cabbage is just softened but still crunchy.
4. Check the seasoning and adjust salt and pepper to taste. Stir in the lemon juice.
5. Serve the soup in bowls with a dollop of sour cream on top.
