A warm and comforting cabbage soup recipe filled with savory ground beef, a medley of vegetables, and flavorful beef stock. This wholesome soup is a hearty and satisfying dish, perfect for cozy evenings or gatherings with loved ones.
| 1 1⁄2 | pounds ground beef (or pork) |

| 1 1⁄4 | pounds cabbage, shredded (or sauerkraut, rinsed in cold water and squeezed dry) | 
| 1 | medium yellow onion, chopped | 
| 1 | carrot | 
| 1 | bell pepper | 
| 2 1⁄2 | quarts beef stock | 
| 1 | cup tomato juice | 
| 3 | potatoes | 
| • | salt and pepper | 
| 1⁄2 | cup lemon juice | 
| • | sour cream (optional) | 
| 1. | In a deep soup pot over medium heat, add the ground beef and cover with water. Boil for 1 to 2 hours until the meat is tender. |

| 2. | Once the meat is almost done, add the onion, carrot, bell pepper, and potatoes. Let them simmer together. | 
| 3. | When the potatoes are soft, add the shredded cabbage (or sauerkraut), salt, pepper, and tomato juice. Cook until the cabbage is just softened but still crunchy. | 
| 4. | Check the seasoning and adjust salt and pepper to taste. Stir in the lemon juice. | 
| 5. | Serve the soup in bowls with a dollop of sour cream on top. |
