Dukkah Spice Blend

Ingredients
4 | tablespoons sesame seeds |

2 | tablespoons coriander seeds |
1 1⁄2 | tablespoons cumin seeds |
1 1⁄2 | tablespoons black peppercorns |
1⁄2 | tablespoon sea salt |
1⁄8 | cup toasted hazelnuts |
2 | teaspoons ground cinnamon |
Instructions
1. | In a small, heavy-based frying pan, heat over medium heat and add the sesame seeds. |

2. | Gently shake the pan until the seeds turn a shade darker and release a nutty aroma. |
3. | Transfer the toasted sesame seeds to a bowl. |
4. | Repeat the toasting process with the coriander and cumin seeds. |
5. | Allow the seeds to cool and crisp up for a few minutes. |
6. | In a clean coffee or spice grinder, combine the toasted sesame seeds, coriander, cumin, peppercorns, and sea salt. Grind the mixture finely. |
7. | Finely chop the toasted hazelnuts in the grinder, being careful not to blend them into a paste. |
8. | Mix the chopped hazelnuts with the ground sesame seed and spice mixture, then add the ground cinnamon. |
9. | Store the Dukkah spice blend in an airtight container until ready to use. |
