1 1⁄2 | tablespoons black peppercorns |
1⁄2 | tablespoon sea salt |
1⁄8 | cup toasted hazelnuts |
2 | teaspoons ground cinnamon |
Instructions

- In a small, heavy-based frying pan, heat over medium heat and add the sesame seeds.
- Gently shake the pan until the seeds turn a shade darker and release a nutty aroma.
- Transfer the toasted sesame seeds to a bowl.
- Repeat the toasting process with the coriander and cumin seeds.
- Allow the seeds to cool and crisp up for a few minutes.
- In a clean coffee or spice grinder, combine the toasted sesame seeds, coriander, cumin, peppercorns, and sea salt. Grind the mixture finely.
- Finely chop the toasted hazelnuts in the grinder, being careful not to blend them into a paste.
- Mix the chopped hazelnuts with the ground sesame seed and spice mixture, then add the ground cinnamon.
- Store the Dukkah spice blend in an airtight container until ready to use.
