Preparation of Prawns

1. Begin by washing the large Mozambican prawns, pat them dry, and carefully cut open the backs to remove the dark veins. Use kitchen scissors to butterfly the prawns without removing the shells.
2. Prepare the oil a day in advance for optimal flavor. Remove seeds from dried hot peppers, chop them, and combine with oil, lemon juice, garlic, salt, and paprika in a bottle. Heat the oil gently without boiling until it turns a reddish color.
3. Marinate the prepared prawns in the oil mixture for at least 30 minutes in the fridge before grilling or baking at 350°F (180°C) until they turn pink. Be cautious not to overcook.
4. Once cooked, drain the prawns on paper towels to remove excess oil before serving on a hot platter with accompaniments like rice and fresh bread. Enjoy this dish by eating with your hands for an authentic experience.
